Whenever friends from afar visit, I take them on a culinary tour of Amsterdam and Haarlem. I always take them for a frietje. A Dutch surprise and delight, cherished by friends and family at home on a Friday night, on the terrace along the canal with a crisp glass of wine or as a midnight snack. I don't know how it started, but everyone's heads pipe up, and the mood lifts whenever you say: Frietjes?
